chickpea wraps
drain and rinse a can of chickpeas, then add to a pan with some oil, over medium heat. sprinkle in some paproka, cumin, oregano, salt, pepper.... whatever tastes good. fry gently, careful not to burn, until hot and fragrant. add to a wrap with tatziki, cucumber, tomato and feta.
the next morning for breakfast, take some of the leftovers and mash with a bit of mayo and lemon juice, then spread on a fresh toasted everything bagel.

this was so good and easy to put together. we did the jam on the side of the sandwiches, because of the kids, but the adults all opened their sammys and added it. the kids refused to try.
the salad was delicious - a definite make again, as were the sandwiches.

a little more complicated that the first brunch sandwich, but well worth it. the boy made most of the sandwich and sauce on his own, with his dad anxiously watching over his shoulder. we left the tomatos off for the tomato haters, but i fried them and we added them to the tops of sannies.
some people had yogurt parfaits, with the granola and fruit on top, some had straight yog, and some had none at all

crepes and omlettes
The Boy is taking foods this year and is loving it. So far he and his partner have not always been successful with their creations, but they are having a good time learning and trying.
They made crepes, and so he declared that we needed to make them at home.
He was nervous when it was time to make french omelettes, so we practiced at home.
And then knocked it out of the park in class!

an easy and delicious breakfast casserole from tik tok
so good. everyone loved it and the leftovers did not last long.
mix half a bag of tater tots and 6 eggs, beaten, 1/4 cup milk, and your seasonings of choice. add in 1 lb cooked sausage, 8 slices of cooked bacon - we did not add this - and a cup of cheese. pour into a 9x13 pan and top with the rest of the bag of tots and more cheese if desired. bake at 350 for 20-30 minutes.

sausage balls and eggs benedict casserole
I thought I'd share these 2 recent recipes I made for breakfasty meals. We all enjoy breakfast for dinner, which happens more often than breakfast for breakfast on the weekends because one kid sleeps the morning away while the other is an early riser, and their dad would sleep the morning away if we let him.
First is these sausage balls, and DANG. These are good. GOOD. Which is good, because only The Mister and I liked them so there were lots leftover, but they reheated well. If you like sausage, and you like balls, you should try them.
That is not my dinner plate by the way, even though it looks like it. It was the plate for the table that I put down on top of my plate for a photo.
Next up was an overnight eggs benedict casserole.
You do your eggs, ham and english muffins in your pan overnight, and hollandaise sauce on the side for serving. Now this is the sort of dish that I would like to made just enough for the meal, because I am not a fan of these kinds of leftovers. For me, they just don't reheat well, and I don't enjoy it. Unfortunately but not a surprise, neither kid liked this either, and so there were a ton of leftovers. I ate one helping and the poor Mister had to take care of the rest. But it was delicious, I promise.

pancake battered sausage
I don't recall where I saw this, but when I did I thought, oh, the kids would love this!
Of course I was WRONG - The Girl wouldn't even try it and The Boy was polite but refused a second one and asked me where the "regular" pancakes were instead.
But if you were interested, it's a cute switch up on a pancake and sausage breakfast.
Cook your sausage patties and blot off any greasy goodness.
Make your pancake batter and heat up your frying pan. When your pan is ready, dip a patty into the batter and lay it in the pan.
Also make some regular pancakes for your daughter who is acting like a sausage in a pancake is some sort of international crime you should be arrested for.
Artistically plate them on paper plates the kids found in the basement and insisted on using. Serve with butter and syrup and don't expect my kids to enjoy them.

2 smoothies, one photo
I've been trying to get back in the habit of smoothies for breakfasts. They are quick and an easy way to get some fruit or veg into the morning. I've been using some protein powder too, although I'm still looking for one that tastes good and doesn't overpower the whole drink. Does such a protein powder exist???
I sometimes will just throw in whatever I can find in the fridge or freezer - leftover fruit from the kids, expired yogurt, some spinach or beets, frozen berries. Milk or water to get it going in the blender. They don't always taste great, but it's fine.
A favorite I came up earlier this year is a good one that makes me feel like I treated myself at a coffee shop -

I've done it withe a combo of pineapple and mango too, which is just as delicious.

Smitten Kitchen morning
I spent some time on the smitten kitchen website recently, bookmarking delicious recipes, and Sunday morning I headed into the kitchen to do some cooking:
What a lovely cake! Everyone enjoyed it, especially The Grandpa, who requested I make another just for him. And I did.
Then I made some also very delicious whole wheat chocolate oat cookies.
When you put wheat germ and whole wheat flour in a chocolate chip cookie, they are automatically healthy. It's science.
Next, for breakfast we made a batch of blueberry yogurt multigrain pancakes
but without the blueberries. They have rye flour in them, which you don't often see in pancake recipes.
The grownups made pancake sandwiches, with sausage and cheese and hot sauce, and a drizzle of syrup.

i made an omelette!
I've watched a few episodes of Selena and Chef on Crave, and it's a pretty fun show. The premise if you haven't seen it is that professional chefs teach a non chef how to cook - over video chat. Truly a made for a pandemic tv show.
I've had a couple of favorite episodes, but the episode with Chef Ludo Lefebvre was the top for me, because now I know how to make a real omelette.
When I was a kid my mom had one of those omelette pans that was 2 separate sides and hinged in the middle. I don't think it really gave her the results she wanted, because I don't remember her using it a ton, but I do remember not being very excited about omelette breakfasts because the outside of the omelettes were always browned, and I HATE eggs that are cooked so long they brown. Hate hate hate. And because of that I never made them at home or ordered them at restaurants.
But! The recipe he showed Selena cooked quickly and didn't brown and I was so interested to try it, so I did, the very next morning.
You guys, making an omelette is so easy. So easy!!!!! I made 3 practically perfect omelettes in almost no time at all.
My favorite part might have been the filling - boursin cheese, which we happened to have in the fridge, yay, a cheese that the chef called something like "the velveeta of France."
I've made them a few times now and they turn out lovely every time.
