Marcella Hazan's smothered cabbage and rice soup



This is a beautiful soup that we found very comforting when the weather changed abruptly early in the Fall.  The cabbage takes a while to cook but it's a nice feeling sometimes to slow down and enjoy cooking, not to rush through to the next busy task.
I've followed this method to make 2 clean-out-the-fridge soups since then, almost, but not quite, as good.
