Help Please!

This is a shorty post today....I'm pooped from lack of sleep; being at the running track at 6:30 this morning for Day Two of my walking program my friend Tito decided on a whim that we should start; and yard work when I got home tonight. So instead of telling you about dinner, which I can't do because we haven't eaten yet, I need your help.

I've got 6 or 8 bananas that are rapidly spoiling. I don't want to freeze them, because I'll never use them and my freezer is too full. Scott wants banana bread, but I don't have any recipes.

If anyone has a good (naturally) recipe for banana bread, preferably with no nuts, would you please email me (iliketocook AT shaw DOT ca), or leave something in the comments?

4 ripe bananas, smashed
1/3 cup melted butter
3/4 cup white sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cup of flour

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into
the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 30 min. Cool on a rack. Remove from pan and slice to serve.

maybe I should add that I love this receipe because it is the only one which is moist and has a true banana taste. Yum!

My hubby's favorite:

1/2 c butter
3/4 c molasses
1 egg
2 c mashed bananas
2 t baking soda
1 3/4 c flour

Cream butter, beat in molasses, egg and bananas. Mix in baking soda and flour. Bake at 325 in a greased pan for 1 hour.

I've got one I like but the really there are so many that they all taste alike. I kicked up my last batch by cooking my banana's in butter and brown sugar then adding a splash of rum to it, before I added them into the bread. The extra caramel flavor to the banana's really adds to the bread, and I found it was nice and moist.
