not that pancakes are difficult to make, but i thought it might be nice to have a ready made mix on standby for when The Girl requests weekend pancakes. I used a Nigella recipe for the mix. it was a breeze to have an easy mix on hand to grab - it only took a few minutes and the ingredients couldn't be simpler.
