1 cup bran
1 cup milk
2 TB maple syrup
1/3 cup oil
1 egg
1/3 cup brown sugar
1 apple grated, unpeeled
1 cup flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup blueberries, fresh or frozen
Preheat oven to 375. Add bran, milk and maple syrup to a mixing bowl, stir and let sit 10 minutes. Mix the oil, egg, brown sugar and apple into the bran until combined. Stir in the flour, baking power, soda and salt and mix. Gently stir in the blueberries.
Divide between 12 muffin cups and bake 15-18 minutes.
