Save The Salsa, Save the Dinner.

The best thing about NaBloPoMo? Finally getting rid of some posts I've had sitting in my draft file for ages. And this is one of them!!!!!

You guys! The movers are bringing all our stuff to our new house today! Tomorrow and maybe the next day will be pre-written posts, but I'll be back shortly with pictures of my new kitchen.


OK, pop quiz hot shot:

You've bought some salsa from the store. Chipolte Salsa. It is incredibly hot, so hot you wave your hand in front of your mouth after every bite and make a "whooooo" sound. You hate to have to throw it away. What do you do? What do you do???

Make a Salsa Salad Dressing, you fool, and save the day!

Take that incredibly hot salsa (we had about 1/2 a cup) and mix it in a blender, processor or with an immersion blender into some non-fat sour cream. Start with at least a cup of sour cream and go from there. Add more sour cream as needed, a pinch of salt and pepper and maybe a bit of lime juice. If the dressing is too thick for you, thin with a bit of milk. Et voila! Salsa Salad Dressing.

Then for dinner that night serve this:
a green salad with tomatos, green onions and cheese, topped with crumbled tortilla chips and the lovely salsa dressing.

I'm thinking I need to participate in NaBloPoMo for the same reason you stated - to get rid of some old stuff I have waiting to be published!!

I love this idea for a salsa salad dressing! It sounds fantastic!
