This weeks pasta dish for Presto Pasta Nights is the last pasta dish I made before we left Calgary. It was totally excellent, because I used up a ton of stuff from the pantry that I didn't have to throw away, give away or pack!
I cooked up all my little amounts of pasta - a bit of fusilli, some macaroni noodles, a teeny handful of linguine - none of them enough for one meal, but together - well, there was lots.

I layered the noodles with bottled spaghetti sauce, frozen chopped spinach that I thawed and squeezed the moisture out of, and cottage cheese. Then I topped it with the last of the mozzarella and Parmesan cheese and baked it.

Isn't she a beauty!

It was a delicious pseudo lasagna, perfect for a somewhat chilly day. As much as I dislike winter, I do like the comfort food that the cooler weather brings.
