Spicy Gazpacho
From my mom, who adapted it from Self Magazine.
3 cloves garlic, chopped
6 tsp red wine vinegar
1 tb thyme, chopped
1/2 tsp cayenne pepper
1 1/2 lb tomatos, roughly chopped
1 cup cucumber, peeled seeded and diced
1 cup sweet peppers (red, orange, yellow) diced
1/2 cup red onion chopped
1/2 tsp celery salt
1 tb Worcestershire sauce
3 tb lemon juice
salt and pepper to taste
In a food processor or blender, puree the garlic through tomatos until smooth. Refrigerate 1 hour, then strain thorough a sieve. Return the liquid to the processor and add the remaining ingredients. Pulse until you reach the desired consistency. Taste and season with salt and pepper.

I adore gazpacho! Great recipe. I can't wait to try it with the fresh summer tomatoes.

I have nevery made gazpacho, but this recipe looks great. I may have to give it a try. Yummy.
It sounds something like a bloody mary but I wouldn't know because I don't drink...Interesting recipe and such a great photo...
Yeah, it's really good...very refreshing and VERY garlicky.
