Potato-Leek Soup





This is a family recipe for THE BEST potato leek soup ever!

1 1/2 cups diced leeks, approximately 2
1/2 cup diced onion
1 clove garlic minced
4 tb butter
4 cups chicken broth
1 1/2 cups diced potato
1 cup heavy cream (I use milk)
salt and pepper

Saute leeks, onion and garlic in butter. Add the broth and potatos, cover and simmer until potatos are tender. Puree, then add cream or milk. Season with salt and pepper.

I love potato soup and I see so many with leeks in them. I think I will have to give it a try. Thanks for sharing your recipe.
