Pasta

Here's a pasta recipe.
All ingredient amounts are approximate, like sometimes a recipe should be!

Chop a couple of cloves of garlic, and cook over fairly high heat in some olive oil. After a couple of minutes, add some red pepper flakes, and stir for another couple of minutes. Then a handful or two of chopped up Kalamata olives, pits removed, obviously. Cook for a couple more minutes, then add a large can of chopped tomatoes. Simmer for 10 or 15 minutes, then season with salt and pepper. You won't need a lot of salt because of the olives. Toss with pasta.

So good.

My fault

I should have known better than to heat up my lunch when my boss was still here. Sure, he goes out for lunch EVERY DAY. But why shouldn't he want to eat my lunch too? That's reasonable, isn't' it? Today I brought in the last of the BBQ pizza, and of course my boss went crazy. I finally had to give him some. He did like it though. He is a bachelor. He eats things like creamed tuna on toast or Frosted Flakes for dinner. So he is kind of like a captive audience. He'll eat pretty much anything, and is always very complementive.(Is that a word?)

And of course, now he has gone for lunch. And I am still hungry.

So long, farewell.....

Got rid of the company this morning. Phew! We are so exhausted, the house is a mess, the fridge is FULL of food, and I have had a hangover since Saturday morning.

We had an excellent time though.

Here's our weekend food story.

Friday night - Chips and homemade guacamole to start. Mango Tango chicken - this was pretty good. One of our houseguests has to be very careful about their salt intake. Otherwise I would have put more salt in the dressing. It was basically mango, lime juice, celery, cilantro, and olive oil if I am remembering correctly. Whizz it in the blender. We made a platter of lettuce leaves with diced cukes and shredded a rotisserie chicken over. You add the dressing on your plate. Pretty good. It could have been a little spicier too maybe, but this is one of those recipes you tinker with. Served it with some spicy rice. Almost TOO spicy. Then for dessert we had the chocolate pate. This was pretty disappointing. I will not make that recipe again. When I made it Thursday night, it looked good, although the white chocolate layer gave me some trouble. It got very thick. The milk choc layer and the dark layer looked good and tasted good when I licked the spoon. But Friday night....first off, I forgot how much I dislike white chocolate. I dislike it very much. But that's OK, as I can just not eat that layer. But the other 2 layers were grainy. Very disappointing. Everyone said they liked it on Friday, but when we had more on Monday, that's when everyone said it wasn't really great. I was surprised because I got the recipe from the Bernard Callebaut website. But maybe I did something wrong. Got the chocolate too hot? Whipped the cream too long? My quest for good chocolate pate continues...

Saturday - Ate breakfast at Millarville. No lunch as we ate too many samples at the market. When we came back into town, we stopped at Sobeys to pick up some misc food items. They were selling 2 lb bags of live mussels for $7.00. So we bought a bag. I don't like mussels, so only the 3 of them ate them. They cooked them with some white wine, salsa and garlic. They looked and smelled good, and considering how fast they downed them, they must have tasted good. I had brushetta. Very good too. That was like our late afternoon snack. For dinner we had Pastiso that we had bought the weekend before at Millarville. What can I say? It's so good. I made a Rhubarb-Raspberry crisp for dessert.

Sunday - I made breakfast - Prosciutto and potato casserole with Brie. Yum! That is my hubby Scott's favorite breakfast. We went to the North end of town to Ikea, Krispy Kreme, Best Buy, and to T&T Supermarket. Our visitors had never been to T&T before, and they loved it, although not as much as they loved Millarville. We bought some sushi for our late lunch. Pretty good stuff, and quite reasonable. For dinner, the boys had Elk steak they had bought at Millarville, and the girls had beef tenderloin. We had rosemary potatoes and asparagus. Krispy Kremes for dessert!

Monday - Everyone's getting tired now. Too much drinking and staying up late and getting up early. Poor Scott has to go to work today, and stay late; he will have to work about 14 hours. Company and I have bagels for breakfast, hit a couple of stores, and then go to the zoo. Eat nasty hamburgers at the zoo and come home. For dinner, I bbq 2 pizzas. We had told them that we do that sometimes (saw it on the Surreal Gourmet show)but they have never tried this before. After I did the first one (chicken and artichokes and olives) boy company takes over for second pizza (prosciutto onion and mushroom). They were both delicious. The disappointing pate for dessert.

Today - whew! They left this morning, so it's just the 2 of us again. Our fridge is so full of food it's terrible. So much of the food we bought didn't even get touched! We'll eat as much of the fresh stuff as we can, and freeze whatever can be frozen. I guess on the plus side, we probably won't have to grocery shop this week. We'll need a while to recover after this weekend, but it was great! And I like to show off my house.

Must nap but look like I am working at the same time!

Planning a menu

We are having company this weekend. Last night I tried to finish planning the menu, but got stuck after the 2nd day. They are here for 4 days. I am reluctant to try too many new things when they are here, in case something doesn't turn out, but I can't think of anything interesting I think they'd like.

If we have pasta for dinner on the 2nd day, can we have it again on the 4th day? Is that too soon? I have so many good pasta recipies.

Ok, we are going to BBQ a pizza. Now my shopping list is bigger than ever. I am just too tired and stressed to think about cooking for the company any more. WHY did we invite people to stay 2 weeks after we moved into our house? Insane if you ask me. While I am cleaning up the boxes and finding places to put the last few things kicking around, I need to be cleaning for the company, planning the menu, shopping and prepping for dinner tomorrow night.

Tomorrow we are having "Mango Tango" Chicken and chocolate pate for dessert. I have not made chocolate pate before, so I am quite excited. 2 hours to go at work...
