Soup Thursday

I know! Beans again. In my defense I haven't been well this week and this is a simple soup that doesn't require a lot of work.

This weeks soup for Soup or Stew Thursday at Cookin' With Cyndi is Black Bean Soup with Coconut Rice from Frugal Cuisine.

So good. This was delicious and filling. The coconut rice is such a perfect accompaniment, I can't imagine eating the soup solo. Again this week I wanted to keep the soup vegetarian, so I opted for Pepper's suggestion to add a chipolte pepper for some extra flavor. I did the same thing as for my other Black Bean Soup - I simmered a dried chipolte pepper in the soup until it was time to eat, then pulled it out.

I like that chipolte pepper idea! Beautiful background but too strong head-on, so you take it out at the end. Nice!
Start feeling better now, this is too long with the sickie stuff.

That sounds delish! I've never had a soup topped with coconut rice. Looks so pretty. Hope you feel better soon :)

Sara - Actually, I would eat more beans if Eric appreciated them. I have a really great book called "Fagioli" by Judith Barrett, which is replete with Italian bean recipes. Your bean soup looks uplifting and tasty. Get well soon!

looks great! Chipotle is such a great flavor enhancer.. I use it all the time in place of meat like flavors... it's great in split pea soup too...mmmm..
and coconut rice... well, you can't get more delicious than that!

Thanks Tanna! About a year ago I went on a dried pepper buying spree, so I'm trying to find things to do with them.

Emmy - thank you too! Coconut rice is my favorite, if only coconut wasn't so full of fat.

Shaun - beans are one of my favorite foods, I couldn't imagine not eating them on a regular basis.

Melody - oooh, split pea soup. I think you just picked next weeks soup for me!
